White orthorhombic or crystalline powder. Odorless, slightly-sweet taste. It melts and decomposes at 253 . It decomposes with dilute alkali at high temperature. It decmposes gradually with acid. Soluble in water, insoluble in ethanol, ether or chloroform. Isoelectric point is PH 6.16
